Cut the apples into paper thin slices, sit in a bowl covered with water and the lemon juice.
Put the water and sugar into a saucepan, stir over low heat until the sugar is dissolved and the
mixture boils, reduce to a simmer.
Drain the water off the apples and pat dry them with paper towel. Drop the apple slices into the
sugar syrup and simmer for 8 minutes or until apples become transparent. Remove from heat
and allow apples to cool in the syrup.
Preheat oven to 160c. Remove the fruit from the syrup and dry on paper towel. Place in single
layers on a lined baking tray. Bake for 20 to 25 minutes or until crisp. Remove from oven and
cool. Store in an air-tight container.
