Macadamia & Apple Crumble Cake Recipe provided by Batlow

Ingredients:

1 cup raw macadamia nuts, roughly chopped
1 ¼ cup self-raising flour
¼ cup All-Bran cereal
½ tsp baking powder
1 tsp ground ginger
1 tsp mixed spice
100g unsalted butter or margarine, softened
¾ cup caster sugar
3 eggs, lightly beaten
¼ cup buttermilk
4 medium Red Delicious apples, cored, peeled, halved and lightly stewed

Crumble Topping:
1 cup raw macadamia nuts
1 Tbsp plain flour
⅓ cup rolled oats
2 Tbsp shredded coconut
¼ cup All-Bran
3 Tbsp butter, cut into small pieces
¼ cup brown sugar

Serves 8 to 10.

  1. Preheat oven to 180c. Line a 23cm round spring form cake tin with baking paper.
  2. Place the chopped macadamia nuts, flour, All-Bran, baking powder, ginger, and mixed spice into a food processor and process until the nuts are ground.
  3. In a separate bowl, beat the butter and sugar using an electric mixer until light and fluffy. Add eggs gradually, beating well after each addition.
  4. Lightly fold through the flour mixture alternately with the buttermilk into the egg mixture until combined.
  5. Spoon cake mixture into the prepared pan, place the apples on top of the cake mixture. Press gently into cake mix.
  6. Combine all the crumble mix together and using fingertips, rub the butter through the mix until well blended. Scatter crumble over the top of the apples and cake mix. Bake for 50 to 60 minutes or until a skewer comes out clean from the centre of the cake.
  7. Allow to cool to 10 minutes before lifting out of tin.
