Apple, Pecorino & Proscuitto SaladRecipe provided by Batlow

Ingredients:

2 tsp honey
1 Tbsp Dijon mustard
3 Tbsp extra virgin olive oil
2 Tbsp lemon juice
2 Cripps Pink (sold as Pink Lady™) apples, cored and finely sliced
4 slices prosciutto, torn roughly
2 red witlof leaves, washed
100g rocket, stalks removed
85g shaved pecorino cheese

Serves 4.
  1. Combine the honey, mustard and oil in a jar. Shake well.
  2. Toss the apple slices in the lemon juice until well covered. Drain excess lemon juice into the honey mix.
  3. Place the prosciutto, witlof and rocket into a serving bowl. Scatter the pecorino and apple on top, drizzle with the dressing.
