Spicy Apple Chutney Recipe provided by Batlow

Ingredients:

1kg apples, we recommend a red apple variety, cored, peeled and cut into large cubes
250g tomatoes, peeled, deseeded and diced
1 cup fresh coriander leaves, roughly chopped
2 Tbsp lime juice
4cm of fresh ginger, peeled and coarsely grated
2 green chilies, deseeded and finely sliced
250g brown onions, roughly diced
1 ½ cups brown vinegar
1 cup dark brown sugar
1 cup fresh dates, deseeded and roughly diced
½ tsp ground cumin
½ tsp ground cardamom

Makes approximately 500 grams.

  1. Place all ingredients into a 3 litre saucepan.
  2. Stir ingredients over a medium heat until boiling.
  3. Reduce heat to low and allow chutney to simmer for 1 hour.
  4. Remove from heat and place immediately into hot sterilised jars, let stand for 30 minutes before placing lid on.

Cooks notes - STERILISING JARS

OVEN METHOD:

  • Wash jars well in hot sudsy water.
  • Rinse jars in hot water and place on cake racks upside down.
  • Place in a preheated oven at 100c for 30 minutes.

DISHWASHER METHOD:

  • Place jars upside down in the dishwasher.
  • Use the normal dishwashing cycle and allow jars to dry well.
