Apple, blue cheese and walnut saladRecipe provided by Bitsize Cooking

Ingredients:

Salad
¼ cup soft blue cheese (such as blue castello or blue brie)
½ cup flat leaf parsley
3 cups mixed lettuce leaves
1 Cripps Pink (sold as Pink Lady™) apple, finely sliced and dipped in a bowl of acidulated water
6 baby roma tomatoes, halved lengthwise
¼ cup walnuts, chopped

Dressing
¼ cup lemon juice
⅔ cup olive oil
Flaked salt, to taste
Freshly ground black pepper, to taste
¼ tsp garlic, minced
2 tsp melted blue cheese

Serves: 2.
Preparation Time: 15 minutes.

  1. Wash all the salad leaves and spin, and then place them in a large bowl.
  2. Add the halved tomatoes.
  3. Toss the chopped parsley through the salad leaves.
  4. Add the walnuts, and crumble the blue cheese through, tossing all ingredients together.
  5. Add the apple slices last, then drizzle the dressing over and serve immediately.

Dressing:

  1. Place the tsp of blue cheese in a microwave safe dish and microwave for 10-20 seconds till it melts.
  2. Combine the dressing ingredients and the melted blue cheese and shake vigorously to combine and emulsify.
